Tinted Coconut:
2 TBS. lime jello
1/3 cup coconut
Measure jello right from package and combine with coconut in a 1 qt. containerTM. Cover and shake vigorously until coconut is evenly tinted (about 1 minute). Use on frostings, cookies, in Easter Baskets, puddings or other desserts. makes 1 1/3 cups.
Passover delight! Macaroons
3 egg whites
1/2 cup sugar
1/2 lb. shredded coconut
1/4 tsp. salt
1/2 tsp. lemon juice
Beat whites until stiff. Add sugar gradually beating constantly. Add lemon juice and coconut. Mix well. Drop by teaspoon onto greased cookie sheet. Bake at 350 degrees for 15 minutes.
